If you enjoy outdoor type stuff, The Bon Secour Wildlife Refuge is a great stop. Waterville can be pretty fun and a great way to beat the heat. Not in Gulf Shores, but If you have the time, I would highly recommend going across the bay to visit Battleship Park and see the USS Alabama, the USS Drum submarine, and an impressive collection of aircraft. The pier at the Gulf State Park is pretty cool too. I think its the longest pier on the Gulf Coast. I'm sure others more familiar with the area can give you several more.

I'm for sure going to check out the pier, maybe we'll hit up the wildlife refuge too. I don't think we'll be venturing much outside of the immediate area though.

A must visit in AL?? I'd say the place they hold Hangout is the only must visit in AL…but I'm pretty sure most of us will be there already. Pensacola is right around the corner.

Not really can't miss spots but:
I never make a Gulf Shores/Orange Beach trip without hitting up Tacky Jack's for a Bushwacker. We will be going there for lunch on Thursday before the Kick-off party starts.
Also, The Pink Pony (HOMF wraps around it) is a hole in the wall but a legend to Gulf Shores. An order of their nachos will feed a group of 6.
If you're into the late night stuff, The Keg always has good bands and great burgers. I think they open around 11ish.
And, if you are a true warrior, the Florabama parties all night. Watch out for cops, though. I'm 33 and not looking for a DUI, so I will not be hitting this spot.

excuse my ignorance, what is a bushwacker?
I really like trying "the best" cheeseburgers in areas and hoping this is like In n Out Animal Style.
Where is "the best" cheeseburger around?

A Bushwacker is a frozen drink made of equal parts vanilla ice cream, light rum, coconut rum, kahlua, and 151. Tacky Jack's bushwackers also have a shot of 151 poured on top of them. It's very nice! 
Nothing compares to an In n Out Animal Style burger. The best I've had in the Gulf Shores/Orange Beach area would have to be The Keg Burger at The Keg. I'm from Montgomery, though, so I may not know of the #1 best in the area.

I would suggest getting a burger at Lulu's (owned by Jimmy Buffet's sister Lucy). I don't eat meat, but they are huge and lots of people like them. The menu is here http://www.lulubuffett.com/menus.php. Also we have a really nice little zoo in walking distance from the festival. If you have a huge appetite and want to go to a fun family place try Lambert's in Foley, just North of Gulf Shores. More food than you can ever eat, with free pass arounds. Bahama Bobs has GREAT cheeseburgers, you can also get a bushwacker. It's on West Beach so waking distance from the festival.

Warning on lulus though, it is always crowded, and crowded like you wouldn't believe. We are talking about sometimes a 3 or 4 hour wait during tourist season. Not worth it, in my opinion, but if you go at a really weird time and dont have a wait its an alright place to grab a bite.
